Statement of Significance

The Old Cue Brewery has considerable significance the Cue community as the site of a commercial enterprise and a source of alcohol for the local population. The place also has considerable landmark value and provides for an entry/ exit statement for the town.

Physical Description

Located immediately north of the town, the Old Cue Brewery consists of storage caves which have been carved into a rocky outcrop. There are foundations of a structure on top of the cave with a shaft cut through for the passage of beer. Some stone has collapsed in part and timber railway sleepers have been used to support the caves. The cave has been backfilled in the last few years to remove the potential for personal injury.

History

History: The Cue Brewery was located on top of a bluff to the north of town. This location was ideal, for the rock was cut away and cellars made in the ground, providing a cool spot. Mr Phillipson started the brewery around 900 with only one cellar. When the Cue Brewery Company took over, two more cellars were added. They were all connected at the back by a ‘drive’ (a type of ventilation shaft) to give a uniform circulation of air. The cellars were capable of storing 60 hogsheads (large casks, usually containing 50 gallons). The company also bottled beer and stout.
